A Rare Discussion Between Chefs and Reviewers
Happy Friday, everybody. Wanted to share yesterday’s Front Burner with Jimmy and Andrew with you. We had a rare gathering of critics and chefs on the air together to discuss the state of affairs between the two camps. In the studio were David Waltuck (élan and, formerly, Chanterelle), restaurateur Drew Nieporent (Bâtard, Tribeca Grill, Nobu, et al), and Alex Stupak (Empellon); calling in were the New York Times‘ Sam Sifton, the Post and Courier‘s Hanna Raskin, and Eater New York‘s Ryan Sutton. We touched on everything from the best way for chefs to respond to critics (if at all) to the interactive nature of restaurant-going and, by extension, reviewing to the state (and definition) of fine dining to the relevancy of the star system in today’s world.
